Ingredients

1/4 cup
plum preserves
2 tablespoons
dry sherry or chicken broth
2 tablespoons
soy sauce
1/4 teaspoon
crushed red pepper
6 (4-ounce)
boneless skinless chicken breast halves

Directions

  1. Heat one side of gas grill on medium or charcoal grill until coals are ash white. Place coals to one side in charcoal grill. Make aluminum foil drip pan; place opposite heat.
  2. Stir together all ingredients except chicken in small bowl.
  3. Place chicken on grill over drip pan. Grill 10 minutes. Brush chicken with sauce mixture. Continue grilling, turning and basting occasionally, until chicken is no longer pink and juices run clear (5-10 minutes).
  4. Broiler Directions: Spray broiler pan with no-stick cooking spray. Prepare chicken as directed above. Place chicken on broiler pan. Broil 3 to 4 inches from heat until chicken is no longer pink and juices run clear (25-35 minutes). Brush chicken with sauce during last 5-10 minutes of broiling time.
