1/4 cup plum preserves
2 tablespoons dry sherry or chicken broth
2 tablespoons soy sauce
1/4 teaspoon crushed red pepper
6 (4-ounce) boneless skinless chicken breast halves
STEP 1
Heat one side of gas grill on medium or charcoal grill until coals are ash white. Place coals to one side in charcoal grill. Make aluminum foil drip pan; place opposite heat.
STEP 2
Stir together all ingredients except chicken in small bowl.
STEP 3
Place chicken on grill over drip pan. Grill 10 minutes. Brush chicken with sauce mixture. Continue grilling, turning and basting occasionally, 5-10 minutes or until chicken is no longer pink and juices run clear.
Broiler Directions: Spray broiler pan with no-stick cooking spray. Prepare chicken as directed above. Place chicken on broiler pan. Broil 3 to 4 inches from heat for 25-35 minutes or until internal temperature reaches 165⁰F, chicken is no longer pink and juices run clear. Brush chicken with sauce during last 5-10 minutes of broiling time.
