These cute little critters combine peanut butter and chocolate into one great tasting cookie.

Ingredients

1 1/4 cups
all-purpose flour
1/2 teaspoon
baking powder
1/2 teaspoon
salt
1/4 cup
Land O Lakes® Butter, softened
1/2 cup
creamy peanut butter
2/3 cup
firmly packed brown sugar
1/3 cup
sugar
1
large Land O Lakes® Egg
1 teaspoon
vanilla
 
1 cup
mini real semi-sweet chocolate chips
1
large Land O Lakes® Egg, beaten

Directions

  1. Heat oven to 350°F. Grease cookie sheet; set aside.
  2. Combine flour, baking powder and salt in bowl. Set aside.
  3. Place butter into bowl. Beat at medium speed, scraping bowl often, until creamy. Add peanut butter, brown sugar and sugar; continue beating until well mixed. Add 1 egg and vanilla; continue beating until well mixed. Add flour mixture; beat at low speed until well mixed.
  4. Place chocolate chips in another small bowl.
  5. Shape dough into 1-inch balls. Picking up <i>1</i> ball between thumb and index finger, gently shape nose of hedgehog. Dip back of hedgehog into beaten egg; then into chocolate chips. Place 2 inches apart onto prepared cookie sheet.
  6. Place 2 chips on each cookie to form eyes. Repeat with remaining dough. Bake for 10-12 minutes or until cookies are just set.
