Ingredients

Pear Base

2 tablespoons Land O Lakes® Butter

1/3 cup firmly packed brown sugar

2 medium pears, peeled, cored, thinly sliced

Cake

1/3 cup firmly packed brown sugar

1/4 cup Land O Lakes® Butter, softened

1 large Land O Lakes® Egg

3/4 cup all-purpose flour

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/3 cup buttermilk  

1 tablespoon mild molasses

Topping

1/2 cup Land O Lakes® Heavy Whipping Cream

1 tablespoon powdered sugar

1/4 teaspoon ground cinnamon

 

 *Substitute 1 teaspoon vinegar or lemon juice and enough milk to equal 1/3 cup; let stand 5 minutes.

How to make

  1. STEP 1

    Heat oven to 350°F. 

  2. STEP 2

    Place 2 tablespoons butter and 1/3 cup brown sugar in bowl. Microwave 20-30 seconds until butter is melted. Spread mixture into bottom of 9-inch round cake pan. Arrange pear slices over brown sugar mixture, overlapping slightly, if necessary.

  3. STEP 3

    Combine 1/3 cup brown sugar, 1/4 cup butter and egg in bowl. Beat at medium speed until creamy. Add flour, 1 teaspoon cinnamon, ginger, baking powder, baking soda and salt. Beat at low speed until mixed. Add buttermilk and molasses; continue beating until well mixed. Spread batter over pears.

  4. STEP 4

    Bake 21-25 minutes or until toothpick inserted in center comes out clean. Loosen cake by running knife around edges. Cool 5 minutes in pan. Place serving platter upside-down over pan; turn over so cake comes out upside down onto platter.

  5. STEP 5

    Combine all topping ingredients in bowl. Beat at high speed until stiff peaks form. Dollop topping mixture onto each cake wedge.

Tip #1

Choose firm but ripe pears for this dessert. Pears are picked green. To ripen at home, place them into a brown paper bag and let them sit at room temperature for a couple days, or until they are slightly soft.
