Ingredients

Pasta

1 (9-ounce) package (3 cups)
refrigerated fresh cheese ravioli

Beef & Zucchini

1 teaspoon
olive or vegetable oil
1 pound
lean ground beef
1 medium (1/2 cup)
onion, chopped
1 teaspoon
purchased minced garlic
1 (14 1/2-ounce) can
diced tomatoes with Italian herbs
2 medium (2 cups)
zucchini, cut into 1/2-inch cubes
1 teaspoon
dried oregano leaves*
1/2 teaspoon
salt
1/4 teaspoon
pepper
1 cup
shredded mozzarella cheese
 
*Substitute 1 tablespoon chopped fresh oregano leaves.

Directions

  1. Cook ravioli according to package directions. Rinse. Drain.
  2. Meanwhile, heat oil in 10-inch skillet; stir in ground beef, onion and garlic. Cook over medium-high heat, stirring constantly, 5-7 minutes or until ground beef is browned. Drain off fat.
  3. Stir in cooked ravioli and all remaining ingredients except cheese. Continue cooking, stirring occasionally, 4-5 minutes or until zucchini is crisply tender. Stir in cheese. Continue cooking 1-2 minutes or until cheese is melted.

The fam loved this. They said it reminded them of lasagna. I added some spaghetti sauce to it though.

This recipe is easy and it doesn't take long to make. It is very good. Love the zucchini in it. (Great way to get vegetables in. ) This is now a regularly requested meal at my home.

A friend gave me oodles of zucchini - found this recipe, and it is terrific! I found it was easier (less mess) making it in a dutch oven type pan.
