1 tablespoon Land O Lakes® Butter

3 (1/2-inch thick) rib pork chops

1 teaspoon finely chopped fresh garlic

1/2 teaspoon salt

1/4 teaspoon pepper

1/4 cup raspberry preserves

1 tablespoon raspberry or white wine vinegar

2 red plums, sliced

How to make

  1. STEP 1

    Melt butter in 12-inch skillet until sizzling; add pork chops and garlic. Cook over medium-high heat, turning once, 8-10 minutes or until internal temperature reaches at least 145°F. and pork chops are browned. Season with salt and pepper. Remove chops to serving platter. Keep warm.

  2. STEP 2

    Add preserves and vinegar to same skillet. Cook over medium-high heat until mixture comes to a boil. Add plums; cook until plums are tender. Serve sauce over pork chops.

Tip #1

Plums come in a variety of colors and sweetness. Red plums tend to be more tart than purple plums and their yellowish interior provide a nice contrast to the crimson sauce. Purple plums have a darker hue and lend a rich color to the pork chops. Plums are a terrific convenience food - no peeling and they cook in minutes!
