1 cup raisins
1 cup boiling water
2 cups all-purpose flour
1 cup firmly packed brown sugar
1/2 cup chopped pecans
1/4 cup Land O Lakes® Butter, melted
1 large Land O Lakes® Egg
1 teaspoon salt
2 teaspoons freshly grated orange zest
1/2 teaspoon baking powder
1/2 teaspoon baking soda
Heat oven to 350°F. Grease 8x4-inch loaf pan; set aside.
Combine raisins and water in bowl; let stand 10 minutes. Stir in all remaining ingredients.
Pour mixture into prepared pan. Bake 55-65 minutes or until toothpick inserted in center comes out clean.
