1 1/2 teaspoons dry ranch dressing mix
4 ounces (2 cups) ciabatta bread, cut into 3/4- to 1-inch cubes
1 teaspoon dry ranch dressing mix
8 ounces boneless skinless chicken breasts, cut into bite-sized pieces
1 (5-ounce) package spring mix salad greens
1/2 cup grape tomatoes, cut in half
1/2 cup chopped cucumber
1 tablespoon olive oil
Salt, if desired

*Substitute your favorite artisan bread for ciabatta.
Melt 2 tablespoons butter in 10-inch skillet over medium heat until sizzling; stir in 1 1/2 teaspoons ranch dressing mix. Add bread cubes; toss to coat evenly. Cook over medium heat, stirring often, 7-10 minutes or until bread cubes are crisp and golden brown. Remove from pan; set aside.
Melt 2 tablespoons butter in same skillet over medium heat until sizzling; stir in 1 teaspoon ranch dressing mix. Add chicken; cook, stirring often, 4-5 minutes or until golden brown and cooked through. Remove from heat.
Combine all salad ingredients in serving dish; toss until combined. Top with croutons and chicken. Serve immediately.
