2 tablespoons Land O Lakes® Butter, melted
1 pound (2 large) tomatoes, cut into wedges
1 small (1/2 cup) onion, sliced 1/4 inch
1 teaspoon chili powder
1 teaspoon finely chopped fresh garlic
1/2 teaspoon ground cumin
1/4 teaspoon ground red pepper (cayenne)
2 tablespoons fresh lime juice
1 tablespoon chopped fresh cilantro leaves
1/2 teaspoon salt
Fresh cilantro leaves, if desired
STEP 1
Heat oven to 450°F.
STEP 2
Spray 15x10x1-inch baking pan with no-stick cooking spray. Place all ingredients except lime juice, cilantro and salt into pan; toss lightly to coat. Bake, turning once, 15-20 minutes or until vegetables begin to brown on edges.
STEP 3
Place roasted vegetables and pan drippings into food processor bowl fitted with metal blade. Add lime juice, 1 tablespoon cilantro and salt. Process 5-10 seconds or until smooth.
STEP 4
Cool completely. Cover; refrigerate until serving time. Garnish with fresh cilantro leaves, if desired.
