Ingredients

Pork

1 pound
lean ground pork
1 large (1 cup)
onion, finely chopped
4 teaspoons
finely chopped fresh garlic
1 (8-ounce) can
tomato sauce
1 teaspoon
dried oregano*
1/2 teaspoon
ground cumin
1/2 teaspoon
salt
1/2 teaspoon
pepper
1/4 teaspoon
ground red pepper (cayenne)
12 (8-inch)
flour tortillas, warmed

Toppings

1 1/2 cups
shredded Monterey Jack or Cheddar cheese
1/2 cup
sour cream
3 cups
finely chopped romaine lettuce
3/4 cup
chopped sweet or red onion
1 small (1/2 cup)
tomato, chopped
 
*Substitute 1 tablespoon finely chopped fresh oregano leaves.

Directions

  1. Place ground pork, onion and garlic in 10-inch skillet. Cook over medium heat, stirring occasionally, 9-11 minutes or until pork is browned. Drain off fat.
  2. Stir in all remaining pork ingredients except tortillas. Continue cooking 3-5 minutes or until heated through.
  3. Spoon pork filling onto tortillas. Serve with toppings, as desired.
  4. Variation:
  5. Spicy Taco Salad: Increase romaine lettuce to 6 cups; spoon pork mixture over lettuce. Serve with toppings as desired. Serve with tortillas.
