1 cup Land O Lakes® Butter
1/2 cup firmly packed brown sugar
1 teaspoon vanilla
2 1/4 cups all-purpose flour
1/2 cup sugar
1 teaspoon ground cinnamon
Combine butter, brown sugar and vanilla in bowl. Beat at medium speed, scraping bowl often, until creamy. Reduce speed to low; add flour. Beat, scraping bowl often, until mixture forms a dough.
Divide dough into fourths. Shape each fourth into 4x1 1/2-inch log. Wrap each log in plastic food wrap; refrigerate at least 1 hour.
Heat oven to 375°F.
Cut logs into 1/4-inch slices with sharp knife. Place 1 inch apart onto ungreased cookie sheets. Bake 7-9 minutes or until lightly browned on edges. Cool slightly.
Combine sugar and cinnamon in small bowl. Roll warm cookies in cinnamon-sugar mixture.
Shape logs into triangle, square or rectangle shapes by flattening sides.
