2 tablespoons Land O Lakes® Butter

1 large (2 cups) onion, thinly sliced

4 (4- to 5-ounce) boneless skinless chicken breast halves

3/4 cup chicken broth

1/4 cup honey

1/3 cup orange juice

1 tablespoon finely chopped chipotle chiles in adobo sauce

1 tablespoon cornstarch


Hot cooked rice

How to make

  1. STEP 1

    Melt 1 tablespoon butter in 10-inch nonstick skillet until sizzling; add onion. Cook over medium heat, stirring occasionally, 5-7 minutes or until onions are golden and caramelized. Remove from skillet; set aside.

  2. STEP 2

    Melt remaining butter in same skillet until sizzling; add chicken. Cook over medium heat, turning once, 12-15 minutes or until internal temperature reaches 165°F and juices run clear when pierced with a fork.

  3. STEP 3

    Combine all remaining ingredients in bowl; mix well. Add to chicken, stirring constantly, 12 minutes or until slightly thickened. Stir in cooked onions.

  4. STEP 4

    Serve sauce over chicken and hot cooked rice.

I could not find the chipotle chiles in adobo sause, so I used Mesquite Smoke BBQ sauce,About 3tbls. Then prepared using recipe with the addition of putting cooked chicken in baking dish covering with onions and sauce and baked for 15 min.
