2 tablespoons Land O Lakes® Butter
1 large (2 cups) onion, thinly sliced
4 (4- to 5-ounce) boneless skinless chicken breast halves
3/4 cup chicken broth
1/4 cup honey
1/3 cup orange juice
1 tablespoon finely chopped chipotle chiles in adobo sauce
1 tablespoon cornstarch
Hot cooked rice
STEP 1
Melt 1 tablespoon butter in 10-inch nonstick skillet until sizzling; add onion. Cook over medium heat, stirring occasionally, 5-7 minutes or until onions are golden and caramelized. Remove from skillet; set aside.
STEP 2
Melt remaining butter in same skillet until sizzling; add chicken. Cook over medium heat, turning once, 12-15 minutes or until internal temperature reaches 165°F and juices run clear when pierced with a fork.
STEP 3
Combine all remaining ingredients in bowl; mix well. Add to chicken, stirring constantly, 12 minutes or until slightly thickened. Stir in cooked onions.
STEP 4
Serve sauce over chicken and hot cooked rice.
