Streusel raspberry bars combine the goodness of old-world baking with updated convenience in this bar made with our award-winning butter.

Ingredients

Crumb Mixture

2 1/4 cups
all-purpose flour
1 cup
sugar
1 cup
chopped pecans
1 cup
Land O Lakes® Butter, softened
1
large Land O Lakes® Egg

Filling

3/4 cup
raspberry perserves*
 
*Substitute 3/4 cup your favorite flavor preserves.

Directions

  1. Heat oven to 350°F. Combine all crumb mixture ingredients in large bowl. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs. Reserve 2 cups crumb mixture; set aside.
  2. Press remaining crumb mixture onto bottom of greased 8 or 9-inch square baking pan. Spread preserves to within 1/2 inch of edge. Crumble reserved crumb mixture over preserves.
  3. Bake for 40 to 50 minutes or until lightly browned. Cool completely; cut into bars.

Recipe Tips

If using dark or nonstick baking pan, reduce oven temperature to 325°F. Bake for 45 to 55 minutes.

These are incredibly rich, delicious and very easy to make. I have used different jams including apricot and blackberry and have never been disappointed. Whenever I bring these to a gathering, I am always asked for the recipe, including once from a professional baker.

These are delicious, "cookie-like" bars, with buttery pastry and tart raspberry flavors. Its very easy for the Linzer-torte-like flavor. I preferred seedless preserves. Next time I am going to try lining all sides of the pan with greased parchment paper or silver foil for easier removal.
