Ingredients

1/2 cup
Land O Lakes® Butter, melted
1/4 cup
rum*
2 tablespoons
honey
2 cups
crushed vanilla wafers
1 cup
finely chopped pecans
1/2 cup
sweetened flaked coconut
3 tablespoons
unsweetened cocoa
White coarse or sparkling decorator sugar
 
*Substitute 1/4 cup water plus 1 teaspoon rum extract.

Directions

  1. Combine butter, rum and honey in large bowl; mix well. Add vanilla wafers, pecans, coconut and cocoa; stir until well mixed.
  2. Shape rounded teaspoonfuls of dough into 1-inch balls. Roll in sugar.
  3. Store refrigerated in container with tight-fitting lid up to 3 weeks. Roll in sugar again before serving. Serve in paper or foil candy cups.

Everybody loved these melt in your mouth morsels. Very attractive in gold paper candy cups.

More of a candy than a cookie in my opinion, as these are very soft and chewy, but delicious. Not difficult to make, and they were a wonderful addition that added something new to a tray of assorted holiday treats for a Christmas party.
