Ingredients

Macaroni & Cheese

8 ounces (2 cups)
uncooked dried rotini or fusilli
8 ounces
Land O Lakes® Deli American, chopped
1/2 cup
milk
2/3 cup
thick and chunky salsa
1 (15-ounce) can
black beans, rinsed, drained
4 ounces (1 cup)
shredded pepper jack cheese

Garnish

2/3 cup
chopped tomato
3 tablespoons
sliced green onion
Chopped fresh cilantro, if desired

Directions

  1. Heat oven to 350°F.
  2. Cook pasta according to package directions; drain. Place cooked pasta into lightly greased 1 1/2-quart casserole dish; set aside.
  3. Combine cheese slices and milk in 2-quart saucepan. Cook over medium-low heat, stirring occasionally, 5-8 minutes or until cheese is melted. Stir in salsa. Pour cheese mixture over pasta; stir to combine.
  4. Top with black beans and pepper jack cheese. Bake 25-30 minutes or until bubbly around edges and cheese is melted. (Cover with aluminum foil if cheese is browning too quickly.)
  5. Garnish with chopped tomatoes, green onions and cilantro just before serving, if desired.

Recipe Tips

- Add corn, green chiles or other southwestern ingredients.

- Add cooked chicken or beef for a hearty dinner.

I really liked this recipe! It would have been 5 stars if i would have added meat. I didnt use american cheese i used Velveeta!
