Macaroni & Cheese
8 ounces (2 cups) uncooked dried rotini or fusilli
8 ounces Land O Lakes® Deli American, chopped
1/2 cup milk
2/3 cup thick and chunky salsa
1 (15-ounce) can black beans, rinsed, drained
4 ounces (1 cup) shredded pepper jack cheese
Garnish
2/3 cup chopped tomato
3 tablespoons sliced green onion
Chopped fresh cilantro, if desired
STEP 1
Heat oven to 350°F.
STEP 2
Cook pasta according to package directions; drain. Place cooked pasta into lightly greased 1 1/2-quart casserole dish; set aside.
STEP 3
Combine cheese slices and milk in 2-quart saucepan. Cook over medium-low heat, stirring occasionally, 5-8 minutes or until cheese is melted. Stir in salsa. Pour cheese mixture over pasta; stir to combine.
STEP 4
Top with black beans and pepper jack cheese. Bake 25-30 minutes or until bubbly around edges and cheese is melted. (Cover with aluminum foil if cheese is browning too quickly.)
STEP 5
Garnish with chopped tomatoes, green onions and cilantro just before serving, if desired.
