Ingredients

2 small acorn squash, cut in half horizontally (not through stem end), seeded

4 teaspoons firmly packed brown sugar

3/4 pound lean ground beef

1 medium apple, cored, chopped

3/4 teaspoon onion salt

1/2 teaspoon ground cinnamon

1/4 teaspoon curry powder

How to make

  1. STEP 1

    Place squash halves into ungreased 9-inch square microwave-safe baking dish, cut-side up. Place 1 teaspoon brown sugar into each squash half. Cover with plastic food wrap. Microwave, turning once, 5-8 minutes or until crisply tender.

  2. STEP 2

    Meanwhile, place ground beef in 10-inch skillet. Cook over medium-high heat, stirring occasionally, 3-4 minutes or until browned. Add all remaining ingredients. Continue cooking, stirring occasionally, 2-3 minutes or until apple is softened. Drain off fat. Uncover squash; spoon about 1 cup ground beef mixture into each squash half. Cover; microwave, turning once, 7-8 minutes or until squash is tender.
