1 tablespoons Land O Lakes® Butter
2 (5-ounce) boneless skinless chicken breasts, flattened slightly
2 tablespoons finely chopped green onions
1/4 teaspoon finely chopped fresh garlic
2 teaspoons seeded, chopped jalapeño pepper
1/4 teaspoon chili powder
1/8 teaspoon ground cumin
2 tablespoons chopped fresh cilantro
1/4 cup seeded, chopped tomato
1/4 cup peeled, chopped avocado
1 1/2 teaspoons firmly packed brown sugar
1 teaspoon lemon juice
Melt butter in 10-inch skillet until sizzling; add chicken. Cook over medium heat, turning once, 3-5 minutes or until lightly browned.
Combine onions, garlic, pepper, chili powder and cumin in bowl. Add to chicken. Reduce heat to low. Cover; cook 6-8 minutes or until chicken is no longer pink.
Combine all topping ingredients in bowl; mix lightly. Remove chicken from skillet; place onto serving plate. Add cilantro mixture to skillet; stir to mix. Spoon over chicken.

This was fabulous! My husband generally doesn't eat avocados, but he ate the salsa and could not stop raving about it. My 15 year old wouldn't eat the salsa, but loved the chicken without it! It's a keeper.
