Ingredients

Caramel

1 cup
caramel bits*
2 tablespoons
Land O Lakes® Butter
2 tablespoons
Land O Lakes® Half & Half

Cookie

30 (1 1/2-inch square)
purchased shortbread cookies
30
pecan halves

Chocolate

4 ounces
chocolate-flavored candy coating (almond bark)
 
*Substitute 25 unwrapped caramels.

Directions

  1. Combine all caramel ingredients in bowl; microwave, stirring every 30 seconds, 1-2 minutes or until melted and smooth.
  2. Place cookies onto waxed paper. Place 1 teaspoon caramel mixture in center of each cookie. Immediately press 1 pecan half into caramel.
  3. Melt candy coating according to microwave package directions. Drizzle 1 teaspoon melted chocolate over pecan. Let stand until drizzle is set.

Recipe Tips

- Reheat caramel mixture by microwaving 15-20 seconds if it becomes too firm while topping cookies.

- Various sizes of shortbread cookies are sold. Sizes between 1 1/2- to 2 1/2-inch diameter can be used.

This has to be the absolute best cookie ever. I seem to remember when I Maude it quite a few years ago it wasn't going a recipe that included the shortbread recipe. My search goes on
