Ingredients

1 pound
frozen cooked breaded chicken tenders
1 tablespoon
Land O Lakes® Butter
1 medium (1 cup)
onion, cut into 1-inch pieces
1/2 teaspoon
cracked black pepper
1/4 teaspoon
salt
1 medium (1 cup)
red bell pepper, cut into 1-inch pieces
1 cup
fresh snow pea pods, cut diagonally in half
1 teaspoon
finely chopped fresh garlic
2 tablespoons
honey
1 tablespoon
freshly grated lemon zest
Hot cooked rice, if desired

Directions

  1. Bake chicken tenders according to package directions. Cut chicken into bite-sized pieces; set aside.
  2. Melt butter in 12-inch nonstick skillet over medium heat until sizzling; add onion, black pepper and salt. Cook 2-3 minutes or until onion begins to soften. Add bell pepper, snow peas and garlic; continue cooking, stirring occasionally, 2-3 minutes or until peppers begin to soften.
  3. Stir chicken pieces into vegetable mixture. Cook, stirring occasionally, until chicken is heated through. Remove pan from heat; stir in honey and lemon zest until mixture is evenly coated.
  4. Serve over rice, if desired.
