Zucchini
6 (6- to 8-inch) zucchini
Filling
1/2 pound spicy Italian sausage
1 tablespoon Land O Lakes® Butter
1 small (1/2 cup) onion, chopped
1 teaspoon finely chopped fresh garlic
1/4 teaspoon salt
1/4 teaspoon pepper
1 (14.5-ounce) can petite-diced tomatoes, drained
12 (3/4-ounce) slices Land O Lakes® Italian Blend, cut diagonally
STEP 1
Heat gas grill to medium or charcoal grill until coals are ash white.
STEP 2
Cut zucchini in half lengthwise. Scoop out center of each zucchini, using spoon or melon baller. Chop zucchini pulp; set aside.
STEP 3
Place sausage into skillet; cook over medium heat, breaking up sausage, until sausage is browned and cooked through. Remove from heat; drain. Stir in chopped zucchini; set aside.
STEP 4
Melt butter in another skillet over medium heat until sizzling. Add onion, garlic, salt and pepper. Cook 5 minutes or until onion is softened. Stir in tomatoes; cook 5-8 minutes or until liquid has been absorbed. Remove from heat.
STEP 5
Lay 2 pieces cheese side-by-side, overlapping slightly, in bottom of zucchini. Spoon sausage mixture evenly over cheese; top each with tomato mixture.
STEP 6
Place zucchini onto grill. Close cover; grill 15 minutes or until zucchini is softened and cheese is melted. Serve warm.
