Enjoy these rich, flavorful biscotti made more tender with butter.
1 cup sugar
1 cup Land O Lakes® Butter softened
6 large Land O Lakes® Eggs
1 tablespoon vanilla
5 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
Heat oven to 350°F.
Combine sugar, butter, eggs, and vanilla in bowl. Beat at medium speed, scraping bowl often, until well mixed. Add flour, baking powder, and salt. Beat at low speed until well mixed.
Divide dough into four equal portions. Shape each portion into 6x3-inch log. Place two logs each 3 inches apart onto ungreased cookie sheets. Bake 25-30 minutes or until set and lightly browned.
Remove logs from cookie sheet. Cut into 1/2 inch slices with serrated knife. Arrange slices, cut-side down, onto cookie sheet. Continue baking 20-22 minutes, turning once, until crisp and golden brown on both sides. Place on cooling racks; cool completely.

I used this recipe and added crushed almonds, walnuts and mixed dried cherries with blueberries. The biscotti are just delicious!! Will use this base recipe again!!!
