Corn salsa gives this sandwich a subtle Southwestern flavor.

1 cup thick and chunky salsa
1/2 cup frozen whole kernel corn, thawed
1/4 cup chopped fresh cilantro
1/4 cup low-fat mayonnaise
1/2 pound thinly sliced deli turkey breast
4 (3/4-ounce) slices Land O Lakes® Provolone Cheese
4 large Kaiser rolls, split
4 lettuce leaves
4 slices avocado, if desired

*Substitute large hamburger buns.
Combine 1 cup salsa, corn and cilantro in medium bowl. Set aside.
Spread cut-side of each roll with 1 1/2 teaspoons mayonnaise.
To assemble each sandwich, layer bottom half of roll with 1 lettuce leaf, 1/4 turkey, 1/3 cup salsa mixture, 2 halves cheese, 1 slice avocado, if desired and top half of roll. Serve with additional salsa, if desired.

I put the cheese on the rolls and toasted them in the oven before assembling the sandwiches, since we're not animals. Had to leave out the avocado since they were all hard as rocks at the grocery store. Served with the slow cooker smoky butternut squash soup for a very easy meal that the guys devoured.
