Ingredients

1/4 cup Land O Lakes® Butter with Olive Oil & Sea Salt

1 leek,  sliced, washed, chopped

1 teaspoon finely chopped fresh garlic

3 tablespoons all-purpose flour

1 cup milk

2 (15.5-ounce) cans great Northern beans, rinsed, drained

2 (14-ounce) cans chicken broth

1/2 teaspoon white pepper

2 cups packed fresh baby spinach leaves

 

 *Substitute 1 small (1/2 cup) onion, chopped

How to make

  1. STEP 1

    Melt Butter with Olive Oil in 3-quart saucepan over medium-high heat; add leek and garlic. Cook, stirring occasionally, 2-3 minutes or until leek is softened.

  2. STEP 2

    Stir in flour until mixture is smooth. Stir in all remaining ingredients except spinach. Continue cooking, stirring constantly, 2 minutes.

  3. STEP 3

    Reduce heat to medium. Cook, stirring occasionally, 8-10 minutes or until soup is slightly thickened.

  4. STEP 4

    Stir in spinach. Continue cooking, stirring occasionally, 2-3 minutes or until heated through.
