1 cup Land O Lakes® Butter, softened
1/2 cup sugar
2 1/4 cups all-purpose flour
1/2 teaspoon baking powder
2 large Land O Lakes® Eggs (yolks only)
1 teaspoon lemon juice
1/2 teaspoon vanilla
1 teaspoon freshly grated lemon zest
Combine butter and sugar in bowl. Beat at medium speed until creamy. Add all remaining ingredients except decorator sugars. Beat at low speed until well mixed.
Divide dough in half. Flatten dough slightly. Wrap each in plastic food wrap. Refrigerate 1 hour or until firm.
Heat oven to 350°F.
Roll out one dough at a time, (keeping remaining dough refrigerated), on lightly floured surface to 1/4-inch thickness. Cut with thimble or 1-inch round cookie cutter. Place 2 inches apart onto ungreased cookie sheets. Sprinkle with decorator sugars as desired. Bake 8-10 minutes or until lightly browned.
