2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
3/4 cup firmly packed brown sugar
1/2 cup Land O Lakes® Butter, softened
2 medium (1 cup ) ripe bananas, mashed
2 large Land O Lakes® Eggs
1 tablespoon lime juice
1 teaspoon freshly grated lime zest
1/3 cup sweetened flaked coconut
STEP 1
Heat oven to 375°F. Place paper baking cups into 12 muffin pan cups; set aside.
STEP 2
Combine flour, baking powder, baking soda, salt, cinnamon and ginger in bowl; set aside.
STEP 3
Combine brown sugar and butter in another bowl; beat at medium-high speed until smooth. Add bananas, eggs, lime juice and lime zest. Beat at medium speed, scraping bowl often, until smooth. Stir flour mixture until well mixed.
STEP 4
Spoon batter into prepared muffin pan cups; sprinkle tops with coconut. Bake 22-27 minutes or until toothpick inserted in center comes out clean. Remove from pan to cooling rack; cool completely.
