2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
3/4 cup firmly packed brown sugar
1/2 cup Land O Lakes® Butter, softened
2 (1 cup) ripe bananas, mashed
2 large Land O Lakes® Eggs
1 tablespoon lime juice
1 teaspoon freshly grated lime zest
1/3 cup sweetened flaked coconut
Heat oven to 375°F. Place paper baking cups into 12 muffin pan cups; set aside.
Combine flour, baking powder, baking soda, salt, cinnamon and ginger in bowl; set aside.
Combine brown sugar and butter in bowl; beat at medium-high speed until smooth. Add bananas, eggs, lime juice and lime zest. Beat at medium speed, scraping bowl often, until smooth. Stir flour mixture until well mixed.
Spoon batter into prepared muffin pan cups; sprinkle tops with coconut. Bake 22-27 minutes or until toothpick inserted in center comes out clean. Remove from pan to wire cooling rack; cool completely.
