Ingredients

1 pound lean ground beef

2 teaspoons taco seasoning mix

2 cups water

6 ounces (1 1/2 cups) uncooked dried elbow macaroni

1 (10-ounce) can diced tomatoes with green chilies  

1/2 cup sour cream

1 cup shredded Cheddar cheese

 

 *Substitute 1 1/4 cups canned diced tomatoes and 2 tablespoons canned chopped green chiles.

How to make

  1. STEP 1

    Cook ground beef in 10- or 12-inch skillet over medium-high heat, stirring occasionally, 5-7 minutes or until lightly browned. Drain off fat.

  2. STEP 2

    Stir in seasoning mix. Add water, uncooked macaroni, and tomatoes; mix well. Continue cooking 3-5 minutes or until mixture comes to a full boil.

  3. STEP 3

    Reduce heat to low. Cover; cook, stirring occasionally, 14-16 minutes or until macaroni is tender. Stir in sour cream; sprinkle with cheese. Cover; let stand about 5 minutes before serving.
