Kabobs
1 pound cod or haddock fish fillets, cut into 1-inch cubes
1 medium zucchini, cut into 3/4-inch chunks
12 cherry tomatoes
1 (8-ounce) package (2 cups) whole fresh mushrooms
1 medium green bell pepper, cut into 1-inch chunks
6 (10-inch) metal skewers
Sauce
1/3 cup Land O Lakes® Butter, melted
2 tablespoons freshly grated Parmesan cheese
1/2 teaspoon dried dill weed
1 tablespoon lemon juice
STEP 1
Heat gas grill to medium or charcoal grill until coals are ash white. Make aluminum foil drip pan; place opposite coals.
STEP 2
Thread fish and vegetables alternately onto skewers.
STEP 3
Combine all sauce ingredients in bowl; brush over kabobs. Place kabobs onto grill over drip pan. Close cover; grill, turning and brushing with sauce occasionally, 10-20 minutes or until fish flakes with a fork.
