Chicken
1 tablespoon Land O Lakes® Butter
8 ounces boneless skinless chicken breasts, cut into bite-sized pieces
2 teaspoons freshly grated lemon zest
1/4 teaspoon cracked black pepper
Dressing
3 tablespoons vegetable oil
1 tablespoon sugar
1 tablespoons apple cider vinegar
1/4 teaspoon salt
Salad
10 ounces (2 cups) cooked wild rice
1/4 cup dried tart cherries
1 medium (1 cup) sweet apple, chopped
2 tablespoons chopped green onion
STEP 1
Melt butter in 10-inch nonstick skillet over medium heat; add chicken, lemon zest and pepper. Cook, stirring often, 5-7 minutes or until golden brown and cooked through.
STEP 2
Combine all dressing ingredients in bowl; mix well. Add all salad ingredients and cooked chicken; mix well. Serve warm or cold.
Cooked wild rice is available in cans or frozen.
