Ingredients

Spicy Salt

1 teaspoon
kosher salt
1/4 teaspoon
paprika
1/8 teaspoon
ground red pepper (cayenne)

Zucchini

1
Half Stick (1/4 cup) Land O Lakes® Butter, melted
1/4 cup
all-purpose flour
2 medium
zucchini, cut into 1/4-inch rounds
1 cup
panko bread crumbs

Directions

  1. Heat oven to 400ºF.
  2. Combine spicy salt ingredients in bowl; mix well. Set aside.
  3. Place melted butter in bowl; set aside.
  4. Combine flour and zucchini slices in bowl; toss to coat. Shake off excess flour. Place zucchini slices into melted butter; toss to coat. Press into bread crumbs until covered. Place in single layer onto baking sheet.
  5. Bake 15-20 minutes or until lightly browned and zucchini is tender. Sprinkle with spicy salt, as desired. Serve immediately or reheat 5 minutes at 400ºF.

Recipe Tips

To re-heat baked zucchini coins, bake 5 minutes at 400ºF.
