1 Half Stick (1/4 cup) Land O Lakes® Butter melted
1/4 cup firmly packed brown sugar
2 tablespoons sugar
1 large Land O Lakes® Egg (yolk only)
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour
1/4 teaspoon baking soda
1/2 cup caramel bits
1/4 teaspoon coarse sea salt
Beat melted butter and sugars in a small bowl until creamy. Add egg yolk and vanilla; beat until well combined.
Whisk together flour and baking soda in another small bowl. Add flour mixture and caramel bits to butter mixture. Stir until combined. Cover; refrigerate 15 minutes.
Heat oven to 325°F. Line cookie sheet with parchment paper; set aside.
Pat dough into 5 1/2-inch circle, about 1/2-inch thick, on prepared cookie sheet. Sprinkle dough with coarse sea salt.
Bake 8 minutes; tap cookie sheet against oven rack or counter top. Bake 5 minutes; tap cookie sheet against oven rack or counter top. Continue baking 3-4 minutes or until edges are dark golden brown. Cool completely.
