Delicious and chocolatey, these mini desserts are an elegant treat for two.
1 Half Stick (1/4 cup) Land O Lakes® Butter
2 ounces semi-sweet baking chocolate
2 tablespoons sugar
1/4 teaspoon espresso powder
1 large Land O Lakes® Egg
1 teaspoon all-purpose flour
Powdered sugar, as desired
Heat oven to 450°F. Spray 2 (4- to 6-ounce) ceramic ramekins with no-stick cooking spray; set ramekins onto sturdy baking sheet. Set aside.
Place butter and chocolate in small, microwave-safe bowl. Microwave in 15 second intervals, stirring after each, until chocolate is melted and mixture is smooth. Whisk in sugar, espresso powder, egg, and flour until well mixed.
Divide batter between prepared ramekins. Bake 11-13 minutes or until cakes have risen around edges but still jiggle in center.
Turn out onto serving plates; garnish with powdered sugar as desired. Serve immediately.
