Barbecue Beef & Bean Casserole
 

Ingredients

1/2 pound lean ground beef

1/4 cup chopped onion

2 slices bacon, chopped

1/2 cup firmly packed brown sugar

1/2 cup ketchup

1 tablespoon prepared mustard

1 tablespoon vinegar

1 (16-ounce) can baked beans

1 (8-ounce) can cut green beans, drained

 

5 (3/4-ounce) slices Land O Lakes® Deli American

3/4 cup crushed corn chips

How to make

  1. STEP 1

    Heat oven to 350°F. 

  2. STEP 2

    Combine ground beef, onion and bacon in 10-inch skillet. Cook over medium heat, stirring occasionally, 5-8 minutes or until ground beef is browned. Drain off fat.

  3. STEP 3

    Stir together ground beef mixture and all remaining ingredients except corn chips and cheese in ungreased 2-quart casserole dish. Bake 20-30 minutes or until heated through and bubbly around edge.

  4. STEP 4

    Cut each cheese slice into 4 strips. Top casserole with crushed corn chips and cheese. Continue baking 3-5 minutes or until cheese is melted.

Tip #1

- To freeze and bake later, prepare recipe as directed except do not add cheese or corn chips. Place mixture into casserole dish or large freezer container. Cover tightly; freeze up to 3 months. To thaw, place in refrigerator for 24 hours or until thawed. Heat oven to 350°F. Place mixture into ungreased casserole dish, if necessary. Cover; bake 30 minutes. Uncover; continue baking 20-30 minutes or until heated through. Sprinkle with crushed corn chips and cheese. Continue baking 5 minutes or until cheese is melted.

Tip #2

- To freeze in individual servings and microwave later, prepare recipe as directed except do not add cheese or corn chips. Spoon into 4 small freezer and microwave-safe containers. Top each with 1 slice cheese. Cover tightly; freeze up to 3 months. To thaw, place in refrigerator 8 hours or overnight. Keep refrigerated until ready to microwave. To cook, top each with 2 tablespoons crushed corn chips. Loosely cover microwave container; microwave on MEDIUM-HIGH (70% power) 2-3 minutes or until mixture is hot and bubbly and cheese is melted.
