Build-Your-Own Quesadilla Bar



6 tablespoons Land O Lakes® Butter with Canola Oil

4 cups chopped cooked chicken

1 pound lean ground beef, cooked

1 (15-ounce) can black beans, drained

1 (16-ounce) can refried beans

1 medium (1 cup) green and/or red bell pepper

1 (4.5-ounce) can chopped green chiles, drained

2 medium (2 cups) tomatoes, chopped

1 small (1/2 cup) onion, chopped

1/2 cup chopped fresh cilantro

3 cups shredded Cheddar cheese

3 cups shredded Monterey Jack cheese


16 (8-inch) flour or corn tortillas


Shredded lettuce

How to make

  1. STEP 1

    Place each filling ingredient into an individual serving bowl.

  2. STEP 2

    Heat 12-inch skillet or griddle over medium heat.

  3. STEP 3

    Butter 1 side of each tortilla. Place desired ingredients onto half of unbuttered side of tortilla. Repeat assembling quesadillas with remaining ingredients, as desired.

  4. STEP 4

    Place 1 quesadilla into skillet, buttered-side down. Cook 3-4 minutes or until lightly browned and cheese begins to melt. Fold tortilla in half; press down slightly to seal. Repeat with remaining quesadillas.

  5. STEP 5

    Cut into wedges. Serve with toppings as desired.
