Blue Cheese & Pepper Salad

1/2 cup light sour cream

1/4 cup milk

2 teaspoons finely chopped fresh garlic

1/2 teaspoon salt


1 (10-ounce) bag (6 cups) mixed salad greens

16 cherry tomatoes

8 (1/2-inch) peeled cucumber slices, quartered

1 cup frozen green peas, cooked, drained

1/2 cup red onion rings, separated

2 ounces (1/2 cup) crumbled blue cheese

Freshly ground black pepper

How to make

  1. STEP 1

    Whisk sour cream, milk, garlic and salt together in bowl until well mixed. Cover; refrigerate until serving time.

  2. STEP 2

    Divide greens among four plates. Top each with tomatoes, cucumbers, peas and onions; sprinkle with blue cheese. Drizzle each serving with 3 tablespoons dressing; sprinkle with pepper.
