Beans & Greens Salad

1 (15-ounce) can black beans, drained, rinsed

1 (15-ounce) can garbanzo beans, drained

1/2 cup Italian dressing or vinaigrette

1 teaspoon freshly grated lime zest

1/4 cup sliced green onions

4 cups baby spinach leaves

1/4 cup chopped fresh cilantro

4 ounces provolone or mozzarella cheese, cut into cubes

How to make

  1. STEP 1

    Combine beans, dressing and lime zest in non-metal bowl; mix well. Cover; refrigerate at least 1 hour or overnight until chilled.

  2. STEP 2

    Stir in all remaining ingredients, just before serving.

Tip #1

You can vary the beans in this salad. Red kidney beans or pinto beans can also be used.
