Broccoli Cheddar Mashed Potatoes

2 pounds potatoes, peeled, cut into 2-inch pieces

3 cups chopped broccoli florets

2 tablespoons Land O Lakes® Butter

1/3 cup finely chopped red bell pepper

1 teaspoon finely chopped fresh garlic

1 1/2 cups shredded Cheddar cheese

1/2 cup sour cream

1/2 cup milk

1/2 teaspoon salt

1/4 teaspoon pepper

How to make

  1. STEP 1

    Place potatoes in 4-quart saucepan; add enough water to cover. Bring to a boil; cook over medium heat 10 minutes; add broccoli florets. Continue cooking 5-7 minutes or until potatoes and broccoli are fork tender; drain. Set aside.

  2. STEP 2

    Melt butter in same saucepan over medium heat until sizzling. Add bell pepper; cook 3 minutes. Add garlic; cook 1-2 minutes or until softened. Remove from heat.

  3. STEP 3

    Add potatoes, broccoli and all remaining ingredients to saucepan. Mash with potato masher until creamy and smooth.
