2 tablespoons Land O Lakes® Butter

2 ribs (1 cup) celery, finely chopped

1 small (1/2 cup) onion, finely chopped

2 teaspoons finely chopped fresh garlic

1 (14.5-ounce) can petite diced tomatoes

1 teaspoon Worcestershire sauce

3/4 teaspoon celery salt

1 (46-ounce) bottle spicy hot vegetable juice

1 (14.5-ounce) can beef broth

1 teaspoon sugar


Garlic croutons

Celery and/or black olives

Land O Lakes® Sharp Cheddar American Blend, cubed

How to make

  1. STEP 1

    Melt butter in 4- to 6-quart saucepan until sizzling. Add celery, onion and garlic; sauté over medium heat 5-7 minutes or until vegetables are tender and starting to brown. Stir in diced tomatoes, Worcestershire sauce and celery salt. Continue cooking 1 minute. Stir in vegetable juice, broth and sugar. Continue cooking until mixture comes to a boil. Reduce heat to low; cook 30 minutes.

  2. STEP 2

    Top each serving with croutons; garnish, as desired.

Tip #1

Place pieces of celery, olives and cheese on small skewers. Serve with soup as a fun garnish.

Tip #2

Add a drop of hot pepper sauce or horseradish for extra heat.
