Cucumber & Tomato Dill Bites

1/2 cup sour cream

3 tablespoons finely chopped red bell pepper

2 teaspoons chopped fresh dill  

1/2 teaspoon freshly grated lemon zest

1/8 teaspoon salt

1/8 teaspoon sugar

20 large cherry tomatoes

2 small cucumbers, each cut into 8 (1/2-inch) slices

Fresh dill sprigs, if desired

 *Substitute 1/2 teaspoon dried dill weed.

How to make

  1. STEP 1

    Combine sour cream, red pepper, dill, lemon zest, salt and sugar in bowl; mix well. Cover; refrigerate at least 20 minutes.

  2. STEP 2

    Cut thin slice off top and bottom of each cherry tomato. Place tomatoes and cucumber slices onto serving platter; dollop each with about 1/2 to 1 teaspoon sour cream mixture. Garnish with fresh dill, if desired.
