Confetti Salmon Patties

3/4 cup finely chopped cucumber

1/2 cup dry bread crumbs

2 (5-ounce) cans boneless skinless salmon, drained

1 small (1/2 cup) carrots, finely shredded

1 large Land O Lakes® Egg

1 1/2 teaspoons dried dill weed

1/8 teaspoon garlic powder

1 tablespoon Land O Lakes® Butter

1/2 cup mayonnaise

1/4 cup sour cream

1/2 teaspoon freshly grated lemon zest

How to make

  1. STEP 1

    Combine 1/2 cup cucumber, breadcrumbs, salmon, carrot, egg and 1 teaspoon dill weed in bowl; mix lightly. Shape into 4 (3/4-inch thick) patties.

  2. STEP 2

    Melt butter in 10-inch nonstick skillet until sizzling; add patties. Cook over medium heat, turning once, 6-10 minutes or until golden brown and cooked through.

  3. STEP 3

    Combine remaining cucumber, remaining dill weed, mayonnaise, sour cream and lemon zest in bowl; mix well. Serve mixture with salmon patties.
