Cranberry Orange & Blueberry Biscotti

2/3 cup sugar

1/2 cup Land O Lakes® Butter, softened

1 tablespoon freshly grated orange zest

1 1/2 teaspoons vanilla

2 large Land O Lakes® Eggs

2 1/2 cups all-purpose flour

1 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup dried blueberries

1/2 cup orange-flavored sweetened dried cranberries, chopped

How to make

  1. STEP 1

    Heat oven to 350°F.

  2. STEP 2

    Combine sugar, butter, orange zest and vanilla in large bowl. Beat at medium speed until creamy. Add eggs; continue beating until well mixed. Add flour, baking powder, baking soda and salt; beat at low speed until just mixed. Stir in blueberries and cranberries.

  3. STEP 3

    Turn out dough onto a lightly floured surface. Knead until smooth, about 10 times. Divide dough in half.

  4. STEP 4

    Shape each half into 10x3-inch log on ungreased baking sheet; flatten slightly. Sprinkle with coarse grain sugar. Bake 25-30 minutes or until lightly browned and top is slightly cracked. Cool 20 minutes.

  5. STEP 5

    Cut each log diagonally into 1/2-inch slices using serrated knife. Place slices, cut-side down, onto baking sheet. Return to oven; bake 15-20 minutes, turning once, until golden brown and crisp. Place onto cooling rack. Cool completely.
