Calico Chicken with Penne

8 ounces (2 1/3 cups) uncooked dried penne pasta

1 tablespoon Land O Lakes® Butter

8 ounces boneless skinless chicken breast strips

1 small (1 cup) green bell pepper, cut into thin strips

1 small onion, sliced

1/2 cup Land O Lakes® Heavy Whipping Cream

1/4 pound thick sliced deli ham or smoked turkey, cut into strips

1/4 cup freshly grated Parmesan cheese

6 Roma tomatoes, thinly sliced

1/2 teaspoon salt

Freshly ground pepper

How to make

  1. STEP 1

    Cook pasta according to package directions. Drain; keep warm.

  2. STEP 2

    Melt butter in 12-inch skillet until sizzling; add chicken strips. Cook over medium-high heat, stirring occasionally, 5-7 minutes or until chicken is no longer pink. Add green pepper and onion. Cover; continue cooking 5-7 minutes or until vegetables are crisply tender.

  3. STEP 3

    Add cooked pasta, whipping cream and ham. Cover; continue cooking 3-5 minutes or until heated through. Stir in cheese, tomatoes, salt and pepper.
