Chocolate Zucchini Snack Cake

Ingredients
23 cup sugar
12 cup Land O Lakes® Butter, softened
12 cup sour cream
1 teaspoon vanilla extract
1 14 cups all-purpose flour
13 cup unsweetened cocoa
12 teaspoon baking soda
12 teaspoon salt
1 cup shredded zucchini
1 cup semi-sweet chocolate chips, divided
How to make

STEP 1
Heat oven to 350ºF. Grease 8-inch square baking pan; set aside.

STEP 2
Combine sugar and butter in bowl; beat at medium speed until light and fluffy. Add egg; continue beating until well mixed. Add sour cream and vanilla; continue beating until well mixed.

STEP 3
Combine flour, cocoa, baking soda and salt in bowl. Gradually add to butter mixture, stirring by hand until combined. Stir in zucchini and 1/2 cup chocolate chips.

STEP 4
Pour into prepared pan. Bake 25-30 minutes or until toothpick inserted in center comes out clean. Cool completely.

STEP 5
Sprinkle remaining 1/2 cup chocolate chips over warm cake; spread to cover.
