Double Lemon Bars

1/2 cup Land O Lakes® Butter, softened

1/2 cup sugar

1 1/4 cups all-purpose flour


1 cup sugar

2 tablespoons all-purpose flour

1/2 teaspoon baking powder

1/8 teaspoon salt

2 tablespoons lemon juice

1 tablespoon freshly grated lemon zest

2 large Land O Lakes® Eggs


Powdered sugar

How to make

  1. STEP 1

    Heat oven to 350°F. Grease 8- or 9-inch square baking pan; set aside.

  2. STEP 2

    Combine all crust ingredients in bowl. Beat at medium speed, scraping bowl often, until well mixed. Press into prepared pan. Bake 15-17 minutes or until edges are lightly browned.

  3. STEP 3

    Combine all filling ingredients in same bowl. Beat at medium speed until well mixed. Pour filling over hot, partially baked crust. Continue baking 17-20 minutes or until top is light golden brown. Sprinkle with powdered sugar. Cool completely. Cut into bars.

Tip #1

For easy cutting, line pan with aluminum foil, leaving 1-inch overhang on ends. Lightly grease foil. Bake as directed above. Remove bars from pan, using foil ends. Peel foil from sides of bars. Cut into bars.
