2 tablespoons Land O Lakes® Butter

2 to 3 pounds turkey thighs, cut in half lengthwise

2 medium (2 cups) yams or sweet potatoes, peeled, cut crosswise into 1/2-inch slices

1 cup mixed chopped dried fruit

1 teaspoon finely chopped fresh garlic

1/2 teaspoon salt

1/4 teaspoon pepper

3/4 cup orange juice

1/4 cup chopped fresh parsley

Hot cooked couscous, if desired

How to make

  1. STEP 1

    Melt butter in 12-inch skillet until sizzling; add turkey thighs, skin-side down. Cook over medium-high heat, turning once, 5-7 minutes or until skin is browned. Drain off fat.

  2. STEP 2

    Serve with couscous, if desired.

    Place yams in slow cooker; top with turkey thighs and dried fruit. Sprinkle with garlic, salt and pepper. Pour orange juice over all ingredients. Cover; cook on Low heat setting 8-10 hours, or on High heat setting 3-4 hours or until turkey is tender. Sprinkle with parsley.

Turkey thighs are an overlooked ingredient, but are perfect for long-cooking dishes that contain hearty flavors or sauces. They become very tender and their flavor blends well with many other recipe components.
