Grilled Cracker Crust Pizzas

4 (8-inch) flour tortillas

2 teaspoons Land O Lakes® Butter, melted

1/4 cup prepared pesto

1 cup cooked chopped or shredded chicken

3 green onions, sliced

1 small tomato, chopped

4 ounces (1 cup) shredded mozzarella cheese

4 ounces (1 cup) shredded Cheddar cheese

How to make

  1. STEP 1

    Heat gas grill on medium or charcoal grill until coals are ash white.

  2. STEP 2

    Brush 1 side of each tortilla with melted butter; place buttered-side down onto ungreased baking sheet. Spread 1 tablespoon pesto over each tortilla. Top with chicken, green onions and tomato. Sprinkle with cheese.

  3. STEP 3

    Place pizzas onto grill. Close lid; grill 3-6 minutes or until cheese is melted and crust is crisp. Cut into wedges.

Tip #1

Shred meat from a ready-to-eat whole deli rotisserie chicken to make preparation easy.

Tip #2

Serve individual pizzas for a light meal, or serve a platter of wedges for appetizers.
