Garden Taco in a Bowl

3/4 pound lean ground beef

1 small (1/2 cup) onion, chopped

1 small (1/2 cup) green bell pepper, chopped

1 (1.25-ounce) package taco seasoning mix

1 cup thick and chunky salsa or picante sauce

1 (1-quart) bottle (4 cups) vegetable juice cocktail

2 cups shredded Monterey Jack or cheddar cheese


Sour cream

Shredded lettuce, sliced green onions and/or chopped tomatoes

Tortilla chips

How to make

  1. STEP 1

    Place ground beef, onion and green pepper in 4-quart saucepan. Cook over medium-high heat, stirring occasionally, 6-10 minutes or until beef is no longer pink. Drain off fat. Stir in seasoning mix; continue cooking 1 minute.

  2. STEP 2

    Stir in salsa and vegetable juice. Continue cooking, stirring occasionally, 3-5 minutes or until heated through.

  3. STEP 3

    Spoon soup into serving bowls; sprinkle each serving with shredded cheese and garnish with desired toppings.
