Gint's Peanut Brittle
 

Ingredients

2 3/4 cups sugar

1 cup water

3/4 cup light corn syrup

1/4 cup Land O Lakes® Butter

1 pound Spanish peanuts

1 teaspoon vanilla

1/4 teaspoon baking soda

How to make

  1. STEP 1

    Butter 2 15x10x1-inch baking pans; set aside.

  2. STEP 2

    Place sugar, water and light corn syrup into saucepan. Bring to a boil over medium-high heat 8-10 minutes or until candy thermometer reaches 280°F or small amount of mixture dropped into ice water forms a hard but pliable strand.

  3. STEP 3

    Add butter and peanuts; cook, stirring constantly, 4-5 minutes or until temperature reaches 300°F or small amount of mixture dropped into ice water forms a hard brittle strand. Remove from heat. Add vanilla and baking soda; stir until combined.

  4. STEP 4

    Immediately pour mixture onto prepared baking sheets; spread evenly to about 1/4-inch thickness. Cool completely.

  5. STEP 5

    Break into pieces. Store in container with tight-fitting lid.
