Ham & Apricot Salad

2 cups uncooked dried radiatore (pasta nuggets)

3/4 cup low-fat mayonnaise

1/2 cup chopped celery

1/2 cup dried apricots, cut into fourths

1/4 cup sliced green onions

1/2 (1/2-inch thick) pound slice deli honey ham or cooked ham, cut into 1/2-inch cubes

1/2 pound slice (3/4-inch thick) cut into 1/2-inch cubes

1/4 teaspoon coarse ground pepper

How to make

  1. STEP 1

    Cook radiatore according to package directions. Rinse with cold water. Drain.

  2. STEP 2

    Meanwhile, combine all remaining ingredients in large bowl. Add cooked radiatore; toss to coat well. Cover; refrigerate at least 1 hour.
