Honey Carrot Muffins
 

Ingredients

Muffins

2 cups all-purpose flour

1/2 cup sugar

2 medium (1 cup) carrots, shredded

2 teaspoons baking powder

1 teaspoon salt

1/2 cup Land O Lakes® Butter, melted

3/4 cup milk

2 large Land O Lakes® Eggs, slightly beaten

1 teaspoon vanilla

Topping

1/4 cup honey

2 tablespoons Land O Lakes® Butter

How to make

  1. STEP 1

    Heat oven to 350°F. Grease or line 12-cup muffin pan with paper baking cups; set aside.

  2. STEP 2

    Combine flour, sugar, carrots, baking powder and salt in bowl. Stir in all remaining muffin ingredients just until moistened.

  3. STEP 3

    Spoon batter evenly into prepared muffin pan cups. Bake 22-26 minutes or until toothpick inserted in center comes out clean. Cool in pan 5 minutes.

  4. STEP 4

    Combine honey and 2 tablespoons butter in bowl. Microwave 30-40 seconds or until butter is melted. Stir until well mixed. Dip warm muffins into honey mixture. Serve any remaining topping with muffins.
