Herbed Mashed Cauliflower

1 medium head (1 1/2 pounds) cauliflower, cut into florets

2 tablespoons Land O Lakes® Butter

1 large (about 1/2 cup) shallot, finely chopped

1/2 teaspoon salt

1 tablespoon chopped chives

How to make

  1. STEP 1

    Place cauliflower into 3-quart saucepan; add water to cover. Bring to a boil. Reduce heat to medium low; simmer 6-10 minutes or until cauliflower is crisply tender.

  2. STEP 2

    Reserve 1/2 cup of the cooking liquid. Drain cauliflower. Place cauliflower into food processor bowl fitted with metal blade. Process until smooth, adding reserved liquid by the tablespoon, if necessary.

  3. STEP 3

    Melt butter in same saucepan over medium heat until sizzling. Add shallot; cook 1-5 minutes or until caramelized. Add cooked shallot mixture and salt to cauliflower; pulse lightly.

  4. STEP 4

    Spoon cauliflower mixture into serving bowl; sprinkle with chives.
